HAWAIIAN BANANA BREAD

Heat oven to 325 degrees. Grease up a loaf pan (mine is Pyrex) with butter (shortening would be fine) and dust with flour.

 

Mix:

1¼ cups flour (I use whole wheat)

1 cup sugar   

½ teaspoon salt

1 teaspoon baking soda

 

In a second bowl blend:

2 ripe bananas

½ cup shortening

3 eggs

I use an electric beater or a

blender would be good.

 

Mix dry stuff & banana goop together,

just until moistened.

 

Pour into the loaf pan and

bake for an hour, checking

with toothpick (when toothpick comes out

pretty dry, it’s done.) It will be medium brown on

top. Let sit for a bit before slicing.

 

Good hot or cold.
